Vineyard
The three varieties used for the elaboration of Davila come exclusively from vineyards located in O Rosal area. A trellis conducting system is used, which is traditional and exclusive in the area. They are at least 40 years old. Sand and alluvial deposit soils, with a great presence of river stones.
The production is limited thanks to the pruning – 8.000 kg/ha of Albariño and Treixadura and 6.000kg/ha of Loureiro. The space between vines is made of natural vegetative cover formed by indigenous species like ray-grass and white clover. Harvest takes place around mid-September.
Elaboration
Harsh pre-selection and grape analysis from the vineyard. Handmade harvest in 20kg cases. Selection table. Cold maceration (10ºC) of the three varieties separately. Pressing. Static settling of the juice made in stainless steel tanks and alcoholic fermentation of the three varieties also separately. Ageing on the lees of Albariño and Loureiro grapes for two months. Filtering through a tangential filter and bottling. The wine rests in bottle for sixty days prior to distribution.
Tasting
DAVILA presents a yellow gold color with golden details. Aromatically intense and complex, in the nose it reminds of spring flowers covered by mango and pineapple notes. In the mouth it is perfectly balanced between greasiness and acidity, with a tropical fruity touch combined with aromatic herbs. An elegant and complex wine with an exquisite and warming follow-through.
