Vineyard

Tempranillo hundred years old vines settled down in soils with low acidity levels and formed by slimy and clay sand layers soil. The system used to coduct the plant is the low-brush, which has a three arms and an 8 fertile bud/plant short pruning. Follow up and control of the vineyards during the full vegetative process, thanks to processes like stripping the leaves off, pruning in green plants and bunches clearing. The production is limited to 5.000 kg/ha. The harvest takes place around mid-October.

Elaboration

Ébano Crianza Tempranillo mainly comes from our one hundred-years-old low-brush vineyards. Handmade harvest in 20kg. cases. Grape selection table in the winery and destemming before entering the stainless steel tanks. Maceration and alcoholic fermentation made under a controlled temperature (25-26ºC) for about fifteen days. Aromas extraction is made during the fermentation. Then, the malolactic fermentation takes place. The wine is aged for thirteen months in French oak barrels. After that, the wine is bottled and aged for twelve more months in bottle prior its distribution.

Tasting

It has an intense mazzard red, bright and attractive. There is a perfect balance between fruit and wood. It has high aromatic potential, highlighting mulberries, ripe black fruits and mineral notes. Nice toasted and creamy hints memories that come from the new oak. It is tasty and soft in the mouth with sweet tannins covered by a delicate fruity feeling.

Viñedo

Cepas centenarias de la variedad Tempranillo asentadas en suelos de escasa acidez y formados por capas lenticulares de arenas limosas o arcillosas. Viñedo conducido en vaso de tres brazos con poda corta de 8 yermas fértiles/planta. Seguimiento y control del viñedo durante todo el ciclo vegetativo mediante operaciones en verde como el deshojado, la poda en verde y el aclareo de racimos. Producción limitada a 5.000 kg/ha. Vendimia a mediados de octubre.

Elaboración

El Tempranillo de Ébano crianza procede, en su mayoría, de nuestros viñedos centenarios en vaso. La vendimia es manual en cajas de 20 kg. Mesa de selección de uva en bodega, estrujado y despalillado previos a la entrada a depósito de inox.
Maceración y fermentación alcohólica bajo temperatura controlada (25-26ºC) durante aproximadamente quince días. Extracción de aromas durante la fermentación mediante la técnica del delestage . Descubado y fermentación maloláctica en inox. Crianza de trece meses en barricas bordelesas de roble francés. Embotellado y posterior crianza de doce meses en botella previa salida al mercado.

Cata

Color rojo guinda, brillante y atractivo. Buen equilibrio entre la fruta y la madera. Gran potencial aromático destacando los aromas a frutas negras maduras, moras y notas minerales. Agradables recuerdos tostados y cremosos de barrica nueva. Sabroso y tierno en su entrada en boca con un tanino dulce arropado por una delicada sensación frutal.
